What is epistasis? What is  polygenic inheritance?

The two ideas are related.  Epistasis is the idea that some genes are impacted by the effects of another gene.  For example, the gene that controls your hairline may have its effect negated by a baldness gene.In a similar way, polygenic inheritance deals with multiple genes, but here, several genes work together to create some trait.  Height, for example is not caused by one specific gene, but the interaction of several genes (plus the environment).
