Carbon has the right number of "valence" electrons to form 4 bonds, and it typically forms covalent bonds which are nice and stable.  This gives it the ability to form a wide variety of bonds with other elements (and other Carbons) to create all the different kinds of organic molecules like fats, proteins, carbohydrates and nucleic acids.

In layman's terms, Carbon is one of those elements that loves to share electrons with other elements, and has 4 places to do so, making it a prime candidate for bonding.
